Erewhon Hack #6, KILLER Cauliflower

Yield: 2 pounds

1 head of cauliflower

1 jalapeno, sliced

4 Tablespoons olive oil

3 Tablespoons apple cider vinegar

1 teaspoon kosher salt

½ teaspoon ground black pepper

2 cloves garlic, minced

1 teaspoon ground turmeric

1 teaspoon ground coriander

½ teaspoon ground cumin

½ a lemon

Remove the core and leaves from the cauliflower and cut into 2-3 inch pieces, rinse and dry.

Pour prepared cauliflower into a large bowl and cover with olive oil, vinegar, jalapeno,

garlic, spices, salt, pepper, and lemon juice. Stir well!!!

Pour the cauliflower mix onto a sheet pan.

Roast at 350°F for 25 minutes

Finish with 2 Tablespoons of julienned raw ginger and the cilantro right when the

cauliflower comes out of the oven, toss well, and season more if your palate desires.

Serve room temperature or chilled.
